It’s not often that I get to make starters. I am more of a mains kinda girl. But when I took part in the festive dinner party challenge I wanted to try something new for the starters part of the meal.
The theme was ‘affordable luxury’ and I knew immediately that I wanted to do something with one of my favourite ingredients, smoked salmon. But rather than going for a simple appetisers option I decide to pair it with some delicious crab meat for a light, uplifting dish that would set the tone for the rest of the meal.
Plus, I am a big believer that starters shouldn’t be too fussy. If you’ve spent hours in the kitchen working on the rest of the meal you want something easy and quick to make.
This smoke salmon and crab salad takes no more than 5 minutes to make and assemble. It’s literally a case of combining ingredients and arranging on a plate.
No fuss dish that looks appetising and rather special. Hoorah!
Smoked Salmon and Crab Salad (serves 2)
- 100g tub fresh crabmeat
- 2 tbsp mayonnaise
- pinch of cayenne pepper
- ½ tbsp lemon juice
- 1 tbsp olive oil
- 6 small slices smoked salmon
- 2 small handfuls rocket/salad leaves
- 8 cherry tomatoes, halved
- 1 avocado, peeled, stoned and sliced
- 1 small shallot, thinly sliced
- melba toast (optional)
- In a bowl stir the the crabmeat with the mayonnaise and cayenne pepper and set aside.
- Using a separate large bowl stir the lemon juice and olive oil together with some seasoning of salt and pepper.
- Arrange the smoked salmon between 2 large plates (I placed mine in strips around the outer area).
- Add the salad leaves, tomatoes, avocado and shallot to the dressing, toss well before adding to the salmon plates (I placed mine in a pile in the middle of the salmon).
- Top the salad with the crabmeat mixture and serve!
